Recipe ingredients

Ingredients needed to make lighter blueberry coleslaw.
  • Coleslaw mix– A 9 ounce bag of coleslaw mix works best for this recipe. We like using a mixture of white cabbage, purple cabbage and shredded carrots.
  • Honey– any kind of honey works here. We like using raw honey.
  • Mustard– dijon mustard is great for the dressing in this recipe.
  • Mayonnaise– use any kind of mayonnaise that works for your dietary needs or tastes.
  • Apple cider vinegar– this adds a good vinegar punch to this dressing.
  • Blueberry– fresh blueberries add a nice crunch here.
  • Chia seeds– these add great texture and lighter omega 3s to the recipe.

Ingredients

  • 6 cups coleslaw mix ( shredded cabbage and carrots), ( we used a 9 ounce coleslaw mix bag)
  • 1/3 cup mayonnaise
  • 2 Tablespoons apple cider vinegar
  • 2 Tablespoons honey
  • 1/2 teaspoon dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper to taste
  • 2 Tablespoons chia seeds
  • 1/2 cup blueberries

Method

  1. Put the shredded cabbage and carrots into a large bowl.
  2. In another smaller bowl, mix the mayonnaise, apple cider vinegar, honey, dijon mustard, salt and pepper together with a fork. Mix until the dressing is smooth. (note: taste it at this point and add more honey if you want it to be sweeter or more vinegar if you want more of a vinegar taste)
  3. Pour the dressing on top of the shredded cabbage and carrots and mix. Then, put the chia seeds on top and mix. Fold in the blueberries.
  4. You can serve this coleslaw immediately ( it will be nice and crunchy). However, if you leave it in the fridge for a few hours- to overnight, all of the flavors seep into the cabbage and the cabbage becomes a bit less crunchy and a bit more flavorful.
