This cucumber tomato avocado salad is a satisfying and simple salad made with fresh veggies, crumbled goat cheese and a mustard balsamic dressing.

This salad has been in our regular salad rotation for years now. Not only is it satisfying and flavorful, but also every time that we make it, we are asked for the recipe.

It is full of fresh tomatoes, cucumbers and avocado. We love how simple this salad is to customize as well. You can add whatever veggies you have on hand and you can also add some grilled chicken, hard boiled eggs, or chickpeas for extra protein.
