Essential Recipe Ingredients for Success
Crafting the perfect gluten-free cherry banana bread begins with selecting high-quality ingredients. Each component plays a vital role in achieving the desired texture, flavor, and nutritional profile. Here’s a closer look at what you’ll need:

- Almond Flour: For the best results, use blanched almond flour. Its fine texture and mild flavor are superior for baking, contributing to a lighter, more tender crumb compared to almond meal. It’s the cornerstone of our grain-free foundation.
- Tapioca Flour: Also known as tapioca starch, this ingredient is crucial for giving the banana bread a pleasant chewiness and helping to bind the gluten-free flours together, preventing a crumbly texture.
- Coconut Flour: This highly absorbent flour is fantastic for gluten-free baking due to its high fiber content. However, it’s essential to use it sparingly and precisely as measured in the recipe, as too much can dry out your bread. It adds a subtle sweetness and a tender crumb.
- Baking Soda: A key leavening agent, baking soda reacts with acidic ingredients in the batter to create gas bubbles, ensuring your banana bread rises beautifully and achieves a light, airy texture.
- Salt: Just a pinch of salt enhances all the other flavors in the bread, balancing the sweetness and making the fruit and chocolate notes pop.
- Cinnamon: We recommend using Ceylon cinnamon for its delicate, nuanced flavor that perfectly complements the bananas and cherries without being overpowering. It adds a warm, inviting spice.
- Eggs: Eggs are essential for structure, moisture, and binding all the ingredients together. They contribute to the rich color and overall richness of the bread.
- Honey: As a natural sweetener, honey provides a lovely depth of flavor and moisture. You can adjust the amount slightly to suit your preference for sweetness.
- Vanilla Extract: A splash of pure vanilla extract elevates all the other flavors, adding a comforting aroma and taste that is classic in banana bread.
- Apple Sauce: Unsweetened apple sauce serves as a healthy fat replacement, adding natural moisture and a hint of fruity flavor without the need for excessive oil or butter.
- Olive Oil: Used in place of traditional butter, a light-tasting olive oil (or extra virgin if you prefer its flavor) contributes healthy monounsaturated fats and helps create a moist, tender crumb.
- Bananas: The star of the show! Ensure your bananas are very ripe, ideally with plenty of brown spots. This indicates maximum sweetness and a soft texture that’s easy to mash and incorporate into the batter.
- Cherries: For this recipe, fresh, pitted, and quartered cherries are a must. They provide bursts of juicy, tart flavor that perfectly balance the sweet banana and chocolate. Using fresh allows for better texture and less moisture interference compared to frozen.
- Dairy-Free Chocolate Chips: Choose a brand that fits your dietary needs. For Paleo and dairy-free options, look for brands sweetened with coconut sugar or stevia. These chocolate chips melt into delightful pockets of sweetness.

Creative Additions & Smart Substitutions
This recipe is wonderfully adaptable, allowing you to customize it based on your pantry staples, dietary preferences, or simply to add a unique twist. Here are some smart additions and substitutions you can consider:
- Instead of tapioca flour, you can seamlessly use arrowroot powder (also known as arrowroot starch). Both are excellent grain-free thickeners and binders that will provide a similar texture to your banana bread.
- Instead of honey, feel free to substitute with an equal amount of pure maple syrup. Both are natural sweeteners that align with Paleo principles and offer a delicious, complementary flavor.
- Instead of olive oil, avocado oil is an excellent alternative. It’s another healthy fat with a neutral flavor profile, ensuring it won’t overpower the delicate notes of banana and cherry in the bread.
- Add Nuts for Crunch: For an extra layer of texture and healthy fats, consider folding in ½ cup of chopped walnuts or pecans along with the cherries and chocolate chips. Toasting them lightly beforehand can enhance their flavor.
- Spice It Up: Enhance the warm spice profile by adding a pinch of nutmeg or cardamom to the dry ingredients. These spices complement cinnamon beautifully and add aromatic depth.
- Citrus Zest: For a brighter, more complex flavor, grate the zest of one orange or lemon into the wet ingredients. The citrus notes will beautifully highlight the cherries.
- Dried Fruit: While fresh cherries are preferred, if unavailable, you could experiment with ½ cup of dried cranberries or chopped dried cherries. Rehydrate them in warm water for 10-15 minutes before adding to ensure they are plump and juicy.
Easy Step-by-Step Baking Guide
Follow these simple steps to create a perfectly moist and flavorful loaf of gluten-free cherry banana bread:

Step 1: Prepare the Batter. Begin by thoroughly combining all the dry ingredients – almond flour, tapioca flour, coconut flour, baking soda, salt, and cinnamon – in one large bowl. In a separate bowl, whisk together the wet ingredients: eggs, honey, vanilla, apple sauce, olive oil, and mashed bananas. Once both mixtures are ready, gently combine the wet and dry ingredients until just mixed, being careful not to overmix. Finally, fold in the fresh cherries and chocolate chips, distributing them evenly throughout the batter.

Step 2: Bake to Golden Perfection. Carefully pour the prepared batter into a parchment-lined loaf pan. For an appealing finish, sprinkle the top with the chia seed and extra chocolate chip topping, gently pressing them into the batter. Transfer the pan to your preheated oven and bake until a beautiful golden brown. Once baked, remove the loaf from the oven and allow it to cool completely on a wire rack before slicing and serving. This cooling step is crucial for the bread to set properly and prevent crumbling.
Tips for Baking the Perfect Loaf
Achieving a perfectly moist, flavorful, and structurally sound gluten-free banana bread requires a few expert tips. Follow these guidelines to ensure your baking experience is a success every time:
- Use Very Ripe Bananas: This cannot be stressed enough! Bananas that are heavily speckled with brown spots are sweeter and easier to mash, contributing maximum flavor and moisture to your bread. Underripe bananas will result in a less sweet and denser loaf.
- Measure Flours Accurately: Gluten-free baking, especially with absorbent flours like coconut flour, demands precision. Spoon your flours into measuring cups and then level them off with a straight edge (the “spoon and level” method) rather than scooping directly from the bag, which can compact the flour and lead to too much being added.
- Don’t Overmix the Batter: Once you combine the wet and dry ingredients, mix only until just combined. Overmixing gluten-free batters can lead to a tough or gummy texture. A few small lumps are perfectly fine.
- Line Your Loaf Pan: Always line your loaf pan with parchment paper, leaving an overhang on the sides. This makes it incredibly easy to lift the finished bread out of the pan, preventing it from sticking and ensuring a clean removal.
- Check for Doneness: Baking times can vary based on oven calibration and pan size. To test if your bread is done, insert a wooden skewer or toothpick into the center of the loaf. If it comes out clean or with a few moist crumbs attached, it’s ready. If it’s still wet, continue baking for a few more minutes.
- Cool Completely: It’s tempting to slice into warm banana bread, but for optimal texture and to prevent crumbling, allow the loaf to cool completely on a wire rack. Gluten-free breads need this time to set up properly.
- Adjust Sweetness: Taste your mashed banana mixture before adding it to the dry ingredients. If your bananas aren’t super sweet, you might consider adding an extra tablespoon of honey or maple syrup to the wet ingredients.
Common Questions About This Recipe
You can keep this delicious banana bread on the counter, lightly covered in aluminum foil or plastic wrap, for up to 3 days. For longer storage, you can refrigerate it in an airtight container for up to a week. It also freezes beautifully! Simply wrap individual slices or the entire loaf tightly in plastic wrap, then in foil, and freeze for up to 3 months. Thaw at room temperature or gently warm in the oven.
While it might seem convenient, this recipe is specifically developed for fresh cherries. They need to be cut, and frozen cherries release a significant amount of moisture as they thaw and bake, which would drastically alter the delicate texture of this gluten-free banana bread, making it potentially soggy. For the best results, stick with fresh cherries.
To ensure your chocolate chips are Paleo-friendly, look for brands that are sweetened with natural ingredients like coconut sugar or maple sugar, and are free from dairy, soy, and refined sugars. I personally love baking with HU chocolate because it fits these criteria perfectly – it’s made with coconut sugar and is both dairy-free and gluten-free, offering a rich, satisfying chocolate flavor.
While this recipe is already dairy-free, making it fully vegan would require substituting the eggs and honey. For eggs, you could try flax eggs (1 tablespoon ground flaxseed meal + 3 tablespoons water per egg, let sit for 5 minutes). For honey, maple syrup is a perfect vegan substitute. Please note that these substitutions might slightly alter the texture and baking time, so keep a close eye on your loaf!
Using a combination of almond flour, tapioca flour, and coconut flour is key in gluten-free baking, especially for Paleo recipes. Almond flour provides structure and protein, tapioca flour adds elasticity and chewiness, and coconut flour offers absorbency and fiber. This blend ensures a balanced texture that mimics traditional wheat-based bread, preventing it from being too dense, crumbly, or gummy.

Ingredients
Bread
- 1 cup almond flour
- 1 cup tapioca flour
- 1/3 cup coconut flour, (I like Nutiva Organic for quality and price)
- 1 1/2 teaspoons baking soda
- ¼ tsp salt
- ½ tsp cinnamon
- 3 eggs
- 1/3 cup honey
- 1 tsp vanilla
- 1/3 cup apple sauce
- ¼ cup olive oil
- ½ cup mashed banana, (this was 1 large banana for me)
- 1 cup pitted and quartered cherries, (this was 17 cherries for me)
- 1/3 cup enjoy life chocolate chips, (I use the Enjoy Life brand because it’s dairy-free, nut-free, soy-free and gluten-free)
Crust
- 1 Tbs chia seeds
- 1 Tbs enjoy life chocolate chips
Instructions
-
Preheat your oven to 350 degrees Fahrenheit (175°C). Prepare a standard loaf pan (approximately 10.5″ x 5.25″ x 3″ for reference) by lining it with parchment paper, allowing some overhang on the longer sides for easy removal later.
-
In a large mixing bowl, combine all the dry ingredients: almond flour, tapioca flour, coconut flour, baking soda, salt, and cinnamon. Whisk them together thoroughly with a fork or a wire whisk to ensure they are well combined and any lumps are broken up. Set this bowl aside.
-
In a separate large bowl, using an electric hand-held mixer, beat together the eggs, honey, vanilla extract, unsweetened apple sauce, and olive oil until the mixture is smooth and well emulsified. Next, add the mashed ripe banana to this wet mixture and continue mixing with the electric mixer until the banana is fully blended into the liquid ingredients.
-
Gradually pour the dry ingredient mixture into the wet ingredients. Mix with the electric hand-held mixer on low speed until the batter thickens and all ingredients are just combined. Be careful not to overmix; stop as soon as no dry streaks remain.
-
Gently fold in ½ cup of the dairy-free chocolate chips and 1 cup of the quartered fresh cherries using a spatula. Mix just enough to distribute them evenly throughout the batter without crushing the cherries.
-
Pour the prepared batter into your parchment-lined loaf pan. Use the back of a spoon to gently pat the top of the batter, creating an even surface. Sprinkle 1 tablespoon of chia seeds and 1 tablespoon of the remaining chocolate chips over the top of the batter, then lightly press them down with the back of the spoon to ensure they adhere during baking.
-
Bake for 40-45 minutes, or until the loaf is beautifully golden brown on top and a wooden skewer inserted into the center comes out clean or with minimal moist crumbs. Once baked, remove the loaf pan from the oven and let it cool in the pan for at least 15-20 minutes before carefully lifting it out onto a wire rack to cool completely. This cooling process is crucial for the bread’s texture to set.
