Recipe ingredients

Ingredients needed to make almond butter and jelly brownies.
  • olive oil– a good quality extra-virgin olive oil is best.
  • dairy-free chocolate chips– use any brand or type of chocolate that works for you. If you are looking for Paleo chocolate, check out HU Chocolate.
  • coconut sugar– this has a lower glycemic index than other sugars.
  • eggs– this helps bind the brownies together.
  • almond flour– use blanched almond flour because it is more refined than almond meal and leads to a better texture in baked goods.
  • baking soda– this helps the brownies rise.
  • honey– any type of honey works, but we like to use raw honey.
  • almond butter– make sure to use a creamy one without added sugar.
  • jam/ jelly– use one without added sugar. We found the St. Dalfour brand to be our favorite option at our grocery store.

Ingredients

Brownie Ingredients:

  • ½ cup olive oil
  • 1 cup dairy-free dark chocolate chips
  • ½ cup coconut sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 2/3 cups almond flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt

Jam/ Almond butter swirl ingredients:

  • 2 Tbs honey
  • 1/4 cup almond butter
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 cup berry jam, (without added sugar, we like the St. Dalfour brand)

Method

  1. Preheat the oven to 325 degrees. Make sure your oven rack is in the upper third of the oven. Line an 8 x 8 inch pan with parchment paper.
  2. In a microwave safe bowl, add the olive oil and chocolate chips. Microwave for 15 seconds at a time, stirring well after each time in the microwave. It took about 1 minute for our chocolate to melt this way. Add the coconut sugar and vanilla, and whisk.
  3. Let the chocolate mixture cool a bit, and then add one egg and whisk until well mixed. Add the second egg, and whisk. Then add the third egg and whisk. The mixture should thicken by this point.
  4. In another bowl, add the flour, baking soda and salt, and mix.
  5. Then, pour the flour mixture into the chocolate mixture, and mix well. Pour the brownie mixture into the pan and set aside.
  6. In a separate bowl, add the 2 Tbs honey, ¼ cup almond butter, ¼ tsp salt and ½ tsp vanilla and mix.
  7. Then, spoon the almond butter mixture and the jam on top of the brownie batter in the pan. There should by clumps of each on top. Use a knife to swirl the jam and almond butter together.
  8. Bake for 35-40 minutes, or until a tooth pick comes out clean.
