Grilled Pineapple Salsa

Grilled Pineapple Salsa

A satisfying from-scratch salsa recipe made with fresh pineapple that is grilled in the oven. It has the just right balance of spicy and sweet!

We love any recipe that you can dunk chips into. Such as our grapefruit guacamole, dairy-free taco dip, and buffalo chicken dip recipes. And salsa is an all time classic dip recipe.

We love this recipe because it has sweet grilled pineapple chunks inside. It can be easily tweaked to be made more or less spicy, and it is full simple ingredients. It is also simple to make and is a wonderful appetizer to bring to a party.

Ingredients

  • 2 teaspoons maple syrup
  • 4 slices fresh pineapple rings
  • 2 cups chopped tomatoes
  • 3/4 cup finely chopped red bell pepper
  • 1/2 cup diced white onion
  • 3 Tablespoons lime juice
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon paprika

Method

  1. Set your oven to "broil" and move the oven rack to the top ring of the oven.
  2. Cover a cookie sheet with aluminum foil and place pineapple rings onto the pan. Cover the tops of the pineapple rings with 2 teaspoons of maple syrup. Broil them for 5-7 minutes, until grilled on top. (Check the pineapple often because the speed at which they grill depends on the oven). Remove from the oven and set aside.
  3. In a large bowl, add 2 cups chopped tomatoes, 3/4 cup finely chopped red bell pepper, 1/2 cup diced white onion, 3 Tablespoons lime juice, 1/2 teaspoon cumin, 1/2 teaspoon salt, 1/2 teaspoon ground black pepper, and 1 teaspoon paprika. Mix well.
