Recipe ingredients

Ingredients needed to make Chicken Bruschetta Salad.
Ingredients to make the dressing in this Chicken Bruschetta Salad.
  • Garlic– this gives the bruschetta a kick, which it is famous for.
  • Onion powder– we like using onion powder instead of onion because it is less harsh of a flavor. But you can use fresh onion if you like it.
  • Tomatoes– we like using medium to larger tomatoes here, but use any kind that you like.
  • Basil– fresh basil is a must here! It gives our favorite flavor.
  • Olive oil– use a good quality olive oil for this recipe.
  • Balsamic vinegar– again use a good quality balsamic vinegar.
  • Chicken– chicken breast is sliced and grilled to add as protein to this salad.
  • Lettuce– we like to use butter lettuce romaine lettuce for this recipe.
  • Red pepper– this adds a nice crunch to the recipe but isn’t necessary. Sometimes we make this salad with it, sometimes without it.
  • Carrots– shredded carrots add nice flavor to this salad.

Expert tips

  • Use a strong salad that won’t wilt easily with dressing. Butter lettuce and romaine work great.
  • We recommend using onion powder in this recipe instead of fresh onion. Fresh onion can make the bruschetta sharp on the palette.
  • If you want more of a classic bruschetta flavor, omit the red pepper. If you want more crunch, then add it.
  • This recipe would work with grilled salmon instead of chicken. Check out this grilled chicken tenders recipe by Cooked and Loved for another chicken option to put on top of this salad.
