The Art of Assembly: Bringing the Casserole to Life
Crafting this savory Paleo Buffalo Chicken Casserole is a rewarding process that culminates in a dish bursting with flavor. The beauty lies in preparing each component to perfection before bringing them all together in a harmonious blend.
The journey begins by combining the primary players: finely shredded chicken, the wonderfully unique strands of baked spaghetti squash, crisp shredded carrots, and tender, steamed cauliflower florets. These ingredients are gathered in a spacious mixing bowl, creating the canvas for our masterpiece. This initial step ensures all the foundational elements are ready to absorb the incredible depth of flavor that’s about to be introduced.
The next crucial step is the introduction of the star — our homemade, creamy Paleo buffalo sauce. This luscious sauce, rich with aromatic garlic and onion, and vibrant with Frank’s hot sauce and coconut cream, is generously poured over the medley of ingredients. A thorough yet gentle mix ensures that every single strand of spaghetti squash, every piece of chicken, and every vegetable floret is completely enveloped in this spicy, tangy, and deeply satisfying coating. This even distribution is key to achieving consistent flavor throughout the casserole.
Once perfectly combined, the entire mixture is then transferred with care into a standard 13×9-inch baking pan. This family-sized dish is now ready for its final touch. For those who appreciate a slightly creamy, tart complement to the spicy buffalo, a generous layer of crumbled goat cheese is evenly spread across the top. This cheese provides a wonderful contrasting texture and flavor that elevates the dish. However, if your dietary preferences require a strictly Paleo or dairy-free meal, simply skip this step; the casserole remains incredibly delicious and satisfying without it.
The casserole then makes its way into the preheated oven, where it bakes for a swift 15 minutes. This short baking time allows all the vibrant flavors to fully meld and deepen, and for the goat cheese (if included) to become beautifully melted and bubbly. For that perfect golden crust and an irresistible finish, a quick stint under the broiler for just a few minutes is recommended. Keep a close eye on it during this stage to achieve that ideal caramelized top without burning. In mere moments, a spectacular, hassle-free, and incredibly tasty meal is ready to be served! This recipe is a definitive must-add to your culinary repertoire, especially if you cherish our original creamy spaghetti squash casserole, are a devoted fan of hot sauce, or are simply seeking an outstanding Paleo and Gluten-Free dish. It’s a delightful blend of ease and gourmet flavor that you’ll want to revisit again and again.

Ingredients
- 1 small-medium spaghetti squash, (approximately 2 lbs)
- 1.5 pounds of chicken breast
- 1 head of cauliflower, (cut into smaller florets)
- 1 1/2 cups of shredded carrots
- 2 Tbs minced garlic, (about 5 cloves, depending on size)
- ½ of a red onion minced, (approximately 1/2 cup)
- 1 Tbs olive oil
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp paprika
- 1 cup canned coconut cream, (Savoy brand recommended)
- 1/2 cup chicken stock
- 1 Tbs coconut flour, (Nutiva brand recommended for quality and price)
- 1 cup crumbled goat cheese, (8 ounces) (* omit to keep strictly paleo)
- 1/2 cup Frank’s hot sauce
Instructions
-
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with aluminum foil for easier cleanup.
-
Prepare the spaghetti squash: Carefully cut the spaghetti squash in half lengthwise. Using a spoon, scoop out and discard the seeds and stringy bits from the center. Lightly brush the cut surfaces with olive oil. Place the squash halves cut-side down on the prepared baking sheet. Roast in the preheated oven for 30 minutes, or until fork-tender. Once cooked, remove from the oven and set aside to cool slightly.
-
While the spaghetti squash is roasting, prepare the chicken: In a large pot, bring water to a rolling boil. Carefully add the chicken breasts and boil for approximately 30 minutes, or until thoroughly cooked through. Remove the chicken from the water and let it cool enough to handle. Using two forks, shred the chicken breast. Set the shredded chicken aside.
-
Cook the cauliflower: In a separate saucepan, fill with water and bring to a boil. Add the cauliflower florets and cook for about 9 minutes, or until tender-crisp. Drain the cauliflower and set it aside.
-
Prepare the creamy buffalo sauce: Heat 1 tablespoon of olive oil in a large skillet or saucepan over medium heat. Add the minced garlic and diced red onion. Sauté for about 4 minutes, until softened and fragrant.
-
Pour in 1 cup of canned coconut cream into the skillet with the garlic and onions, mixing well to combine. Stir in the salt, pepper, and paprika. Bring the mixture to a gentle boil and let it simmer for 5 minutes. Next, add the ½ cup of Frank’s hot sauce and ½ cup of chicken stock. Continue to simmer for another 10 minutes to allow the sauce to reduce slightly and flavors to intensify. Finally, whisk in 1 tablespoon of coconut flour to thicken the sauce to your desired consistency. Remove the creamy buffalo sauce from the heat.
-
Assemble the casserole: In an extra-large mixing bowl, combine the shredded chicken and shredded carrots. Add the cooked cauliflower florets.
-
Once the spaghetti squash is cool enough to handle, use a fork to scrape the flesh from the inside of each squash half. The strands will naturally separate, resembling spaghetti. Add the spaghetti squash strands to the large mixing bowl with the chicken, carrots, and cauliflower.
-
Pour the prepared creamy buffalo sauce over all the ingredients in the large bowl. Mix thoroughly until everything is evenly coated in the sauce.
-
Transfer the entire mixture into a 13×9-inch baking pan. If using, sprinkle 1 cup of crumbled goat cheese evenly over the top of the casserole.
-
Bake the casserole in the preheated 400°F (200°C) oven for 15 minutes. For a beautifully browned and bubbly topping, switch the oven to broil and cook for an additional 3 minutes, watching carefully to prevent burning.
-
Remove from oven, let cool for a few minutes, and serve hot. Enjoy your delicious and healthy Creamy Buffalo Chicken Spaghetti Squash Casserole!
