Zucchini, Eggplant and Ground Turkey Casserole Recipe

A healthy ground turkey casserole with zucchini, bell pepper and eggplant. This gluten-free dinner meal is packed with flavor and vegetables, making it a delicious option the whole family will love.

Ground Turkey, Bell Pepper, Zucchini, and Eggplant Casserole (Gluten-Free)

Ingredients

  • 1 eggplant, sliced longways (about 1/4 inch thick)
  • 1 bell pepper, diced (red, orange, or yellow)
  • 1 zucchini, sliced
  • 1/2 cup diced white onion
  • 1 Tbs diced garlic
  • 1 Tbs olive oil
  • 1 lb ground turkey
  • 1.5 tsp salt, divided
  • 1 tsp ground black pepper, divided
  • 1 tsp oregano, divided
  • 1.5-2 tsp sweet paprika, divided
  • 1 tsp dried basil, divided
  • a scant 1/4 cup tomato paste
  • 3 cups strained tomatoes (Pomi is my favorite)
  • 1/2 cup water
  • 1 cup shredded Parmesan (omit for Paleo or Whole30 compliance)

Instructions

  1. Slice the eggplant longways, about 1/4 inch thick. Place the sliced eggplant onto a tray or cookie sheet and generously sprinkle salt onto the slices. Let the eggplant sit and “sweat” for 25 minutes to draw out moisture.
  2. While the eggplant is sweating, preheat your oven to 400 degrees F (200 degrees C) and begin making the meat sauce.
  3. In a large pan, combine the diced onion, diced garlic, and 1 tablespoon of olive oil. Heat over medium heat for about 3 minutes, mixing every so often, until the onion softens and becomes fragrant.
  4. Add the ground turkey to the pan. Use a rubber spatula to break it up into smaller pieces. Season with 1/2 tsp salt, 1/2 tsp ground black pepper, 1/2 tsp oregano, 1 tsp of paprika, and 1/2 tsp of basil. Mix well and cook the meat for 7-8 minutes, or until thoroughly browned.
  5. Stir the scant 1/4 cup of tomato paste into the browned meat mixture. Cook for another minute, allowing the paste to deepen in color and flavor.
  6. Pour in the 3 cups of strained tomatoes and 1/2 cup of water. Season the sauce with the remaining 1/2 tsp salt, 1/2 tsp ground black pepper, 1/2 tsp oregano, 1/2 tsp basil, and 1/2 tsp paprika (you can add 1 tsp of paprika here if you prefer a more pronounced smoky flavor, but taste first). Mix everything together and let the sauce simmer for 5 minutes, allowing it to thicken and the flavors to meld.
  7. After the eggplant has sweated, use paper towels to firmly blot and remove the liquid that has accumulated on the eggplant slices.
  8. Assemble the casserole: Spoon about 2 cups of the prepared meat sauce into an 11×9 inch baking dish, spreading it evenly across the bottom. Next, arrange a single layer of the blotted eggplant slices over the sauce. Cover the eggplant with about 1.5 cups of meat sauce, spreading it with a spatula. Then, layer all of the diced bell pepper slices on top of this sauce. Add another 1.5 cups of meat sauce, spread evenly, and finally, layer the sliced zucchini on top of the sauce. All of your meat sauce and veggies should be used at this point, creating beautiful alternating layers.
  9. If you are using dairy, generously sprinkle the top with shredded Parmesan or mozzarella cheese (or a blend of both).
  10. Bake the casserole in the preheated oven for 40 minutes, or until the vegetables are very soft when pierced with a knife, and the cheese topping (if used) is golden brown and bubbly. Allow the casserole to rest for 10-15 minutes after removing from the oven before slicing and serving. This resting time helps the casserole set, making it easier to serve clean portions.

Notes

  • Protein Variation: Instead of ground turkey, you can easily substitute with ground beef for a richer flavor, or ground chicken for a similar lean option.
  • Tomato Product Swap: If strained tomatoes are unavailable, an equal amount of good quality tomato sauce can be used as an alternative for the sauce base.
  • Creamy Addition: For an extra layer of creaminess, consider adding a layer of ricotta cheese or Greek yogurt between the vegetable layers. For dairy-free, a cashew cream can be used.
