- 16 ounces plain dairy-free cream cheese, (I used Kite Hill)
- 1/2 cup coconut sugar
- 2 tsp vanilla extract
- 1 1/2 tsp cinnamon, divided
- 1 1/2 cups dark coffee, cooled
- ¾ cup Kahlua
- 1 package of ladyfingers, 7 oz / 200 g (use gluten-free for a GF option)
- 2 tsp unsweetened cocoa powder, divided
- Fresh berries and mint leaves, for garnish (strawberries, raspberries, blueberries, and blackberries)

In a large, chilled bowl, beat the solid coconut cream (from the top of the refrigerated can) with a handheld mixer until it forms a light and airy whipped cream texture. This may take a few minutes.

In a separate bowl, combine the plain dairy-free cream cheese and coconut sugar. Beat until smooth and well combined. Gently fold this cream cheese mixture into the whipped coconut cream, along with 2 teaspoons of vanilla extract and ½ teaspoon of cinnamon. It’s crucial to fold gently, rather than mix vigorously, to maintain the creamy, whipped consistency of the coconut cream.

In a medium, shallow bowl, combine the cooled dark coffee, Kahlua, and ½ teaspoon of cinnamon. Briefly dip half of the ladyfingers into this coffee-Kahlua mixture. Ensure each ladyfinger is thoroughly moistened but not overly saturated – I find counting to two seconds per ladyfinger submerged in the liquid works best.

Arrange the soaked ladyfingers in a single layer at the bottom of an 8×8 inch or 9×9 inch glass baking dish. Evenly spread half of the coconut cream and dairy-free cream cheese mixture over this first layer of ladyfingers. Lightly dust this creamy layer with 1 teaspoon of unsweetened cocoa powder. Next, dip the remaining half of the ladyfingers into the coffee-Kahlua mixture and arrange them on top of the cream layer in the dish. There should be very little coffee mixture left; pour any remaining liquid over the ladyfingers to ensure maximum absorption. Finally, top with the remaining coconut cream and cream cheese mixture. Sprinkle generously with the remaining 1 teaspoon of cocoa powder and ½ teaspoon of cinnamon. Create a vibrant mound of fresh berries (strawberries, raspberries, blueberries, and blackberries work wonderfully) and fresh mint leaves on top.
