As October 1st dawns, a crispness enters the air, signaling the grand arrival of Halloween and the enchanting holiday season that follows. This time of year, with its vibrant colors and cozy atmosphere, ignites a passion for baking and decorating, and for me, that often extends to decorating my culinary creations. Who could resist adding a playful ghost or two to these shimmering glasses of Strawberry Citrus Granita?
While autumn typically conjures images of warm, spiced baked goods, there’s always a special place in my home for delightful cold desserts. This is especially true when they offer a unique twist to the season’s flavors and a welcome boost of goodness to help ward off those pesky fall colds.
The Immune-Boosting Powerhouse: A Granita Packed with Vitamin C
This Strawberry Citrus Granita isn’t just a treat for your taste buds; it’s a vibrant concoction bursting with essential vitamins, particularly Vitamin C. Crafted from a harmonious blend of oranges, strawberries, grapefruit, and lemon, each spoonful delivers a powerful punch of immune-supporting nutrients. Oranges and grapefruits are renowned for their high Vitamin C content, crucial for a healthy immune system and fighting off seasonal sniffles. Strawberries add a touch of natural sweetness and antioxidants, while a hint of lemon brightens the entire profile, making this granita a refreshing and health-conscious choice for any time of year, but especially as the colder months approach.
And let’s be honest, those adorable little ghosts adorning the glasses? They’re not just for Halloween charm – I’m convinced they help scare away any oncoming colds too! It’s a fun and whimsical touch that adds to the festive spirit of this delightful dessert.
Crafting Your Perfect Granita: Tips for Success
Before you embark on this delicious journey, a friendly heads-up: you’ll definitely need a juicer, and you’ll need to set aside a few hours at home to ensure its perfect creation. Using a high-quality juicer is truly the key to achieving the best results for this recipe. It efficiently extracts all the vibrant juices from the fruits, leaving behind the pulp and seeds, which is essential for that smooth, pure granita texture. Attempting this with just a strainer would not only be a pain but also yield a less potent and more pulpy mixture.
The reason for needing to be home is straightforward: granita requires a bit of attention during its initial freezing phase. For the first two hours in the freezer, you’ll need to mix the granita mixture every 30 minutes. This crucial step prevents large ice crystals from forming, ensuring that signature fine, flaky, and delicate texture that defines a true granita. Think of it as gently coaxing the mixture into its perfect form. After this initial stirring period, you can leave it undisturbed for another four hours or more, allowing it to freeze completely into a glorious, citrusy delight. This hands-on approach ensures an exceptionally smooth and enjoyable granita experience.
Once your Strawberry Citrus Granita has achieved its frozen state, the final step to perfection involves a fork. Gently scrape the surface of the frozen mixture. This action creates those beautiful, delicate flakes that resemble freshly shaved ice, giving granita its unique and refreshing mouthfeel. If it feels too solid to scrape easily, just give it a few more minutes in the freezer, then try again. Patience is a virtue when aiming for that ideal light and airy consistency.
Enhancing Your Granita: Toppings and Variations
While this Strawberry Citrus Granita is absolutely stellar on its own, a swirl of coconut cream on top takes it to another level of indulgence. I personally found it to be a wonderful decision, adding a delightful creaminess that beautifully contrasts the icy, tart granita. Mixing it all together before eating creates a symphony of textures and flavors that is simply irresistible. If you’re planning to add this luscious coconut whipped cream, remember to place a can of full-fat coconut cream in the fridge at least a day before you start making the granita. This allows the creamy solids to separate from the liquid, making it easy to scoop out and whip into a light, airy topping just before serving. The instructions for making this simple yet decadent topping are included in the recipe below.
However, let me be clear: this dessert by no means needs the coconut whipped cream to be fantastic. The natural sweetness of the honey, perfectly balanced with the tartness of the orange, grapefruit, and strawberry, creates a complex and incredibly satisfying flavor profile all on its own. The syrup that results from gently boiling a portion of the juice with honey adds a depth of sweetness that truly enhances the vibrant fruit flavors without overpowering them. I honestly feel like I could enjoy cups upon cups of this granita throughout the day!
A Healthy Indulgence for the Holidays
At around 165 calories per glass (without the optional coconut whipped cream), this Strawberry Citrus Granita stands out as a wonderfully healthy dessert option, especially during the often-indulgent holiday season. It’s a guilt-free way to satisfy your sweet cravings while nourishing your body with natural fruit goodness. Whether you’re serving it for a Halloween party, a fall gathering, or simply as a refreshing snack, this paleo and gluten-free granita is sure to be a crowd-pleaser. Enjoy the vibrant flavors and the refreshing chill!

Strawberry Citrus Granita (Paleo, Gluten-Free)

Servings: 4
Prep Time: 2 hrs 30 mins
Total Time: 2 hrs 30 mins

A delicious granita with a festive twist, perfect for a healthy and refreshing treat.
Ingredients
- 2 oranges
- 1 grapefruit
- 3/4 of a 16 ounce crate/basket/container of strawberries
- 1/4 of a lemon
- 1/4 cup + 1 tablespoon honey
Instructions
- Peel the oranges and grapefruit. Cut the fruit into pieces that will fit into your juicer. Leave the lemon peel on the lemon to extract its essential oils and tartness. (A powerful juicer like the Waring Pro Juicer is excellent for quick juicing and easy cleanup).
- Process the oranges, grapefruit, strawberries, and lemon through the juicer. This should yield approximately 2 cups of fresh, vibrant juice. Stir the juice well with a fork to combine all flavors evenly.
- Measure out 1 1/2 cups of the freshly prepared juice and pour it into a small pot on the stove. Add 1/4 cup plus 1 tablespoon of honey to the pot. Heat the mixture over medium heat for about 5 minutes, stirring occasionally, until the honey is fully dissolved and the mixture is warm. This step helps to create a slightly thicker syrup and infuse the honey flavor throughout.
- Turn off the heat and stir in the remaining 1/2 cup of fresh juice. Set the pot aside and allow the entire mixture to cool completely for about 30 minutes at room temperature. Cooling ensures even freezing and optimal texture.
- Pour the cooled liquid into an 8x8x2 inch pan (or a similar shallow freezer-safe dish). Place the pan, uncovered, into the freezer. For the first 2 hours of freezing, it is crucial to stir the mixture every 30 minutes. Use a fork to break up any ice crystals forming along the edges and mix everything together thoroughly, scraping from all corners of the pan. This frequent stirring prevents the formation of large ice crystals and is vital for achieving the fine, flaky texture of granita.
- After the initial 2-hour stirring period, cover the pan tightly with aluminum foil. Return it to the freezer and allow it to freeze without any further stirring for at least 4 hours. You can leave it in for longer, even overnight, but do not remove it before the 4-hour mark to ensure it’s fully frozen.
- Once the freezing time is complete, remove the pan from the freezer. Using a sturdy fork, scrape the surface of the frozen mixture. Continue scraping until the granita forms delicate flakes, resembling freshly shaved ice. If it is too hard to scrape, let it sit at room temperature for a few minutes before trying again. Serve the beautiful granita immediately into bowls or elegant parfait glasses and savor every refreshing bite!
Note: If you want to add coconut whipped cream on top:
- Place a can of full-fat coconut cream (not light coconut milk) in the fridge at least 24 hours before you plan to make the granita. This allows the thick cream to separate and solidify at the top.
- Just before you are ready to serve the granitas, take the chilled can out of the fridge.
- Carefully open the can and scoop out the hardened coconut cream from the top, leaving the watery liquid behind (you can save this liquid for smoothies!).
- Transfer the thick coconut cream into a mixing bowl.
- Add 1 tablespoon of honey, 1 tablespoon of maple syrup, and 1 tablespoon of vanilla extract to the bowl. Using a handheld mixer, whip the mixture on medium-high speed until it becomes light, fluffy, and resembles traditional whipped cream.
- Dollop the freshly made coconut whipped cream generously over your granita just before serving.
