Instructions
To make the Chia Chocolate Pudding:
- Combine the coconut milk, honey, salt, and vanilla extract in a medium saucepan. Heat over medium-high heat until the mixture begins to boil.
- Reduce the heat to low and whisk in the cocoa powder thoroughly until no clumps remain, ensuring a smooth chocolate base.
- Turn off the heat and whisk in the ground chia seeds. The mixture will thicken as it cools and chills.
- Divide the liquid pudding into four ramekins or parfait glasses. Place them in the refrigerator for at least 3 hours, or ideally, overnight, to allow the pudding to set completely.
To make the Chocolate Crumble Cookies:
- Preheat your oven to 350 degrees Fahrenheit (175°C).
- Line a cookie sheet with wax paper or parchment paper to prevent sticking.
- In a medium bowl, combine the almond flour, coconut flour, cocoa powder, salt, and baking soda. Mix these dry ingredients together thoroughly with a fork.
- In a separate small bowl, whisk together the maple syrup and melted coconut oil until the mixture slightly thickens.
