  • a scant 1/2 cup + 2 tsp of maple syrup, divided
  • 1/4 cup melted coconut oil

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
  2. Spread the shredded coconut evenly in a large frying pan. Sprinkle with 2 tsp of maple syrup, mix well to coat, and then spread the coconut out across the pan again. Heat the pan over medium heat and let the coconut toast for about 4 minutes without stirring. Then, begin to stir the coconut regularly, continuing to cook for another 4 minutes. (The total cooking time for the coconut is approximately 8 minutes.) You’ll notice the coconut becoming wonderfully fragrant, turning a light golden-brown color, and acquiring a firmer texture.
