Essential Ingredients for This Flavorful Dish

The magic of this recipe lies in its simple yet high-quality components. Here’s a closer look at what you’ll need and why each ingredient plays a vital role:

  • Chicken: For the best results, use boneless, skinless chicken breast or chicken tenders. Cut into bite-sized pieces, they cook quickly and absorb the rich flavors of the sauce beautifully. You can also use boneless, skinless chicken thighs for an even juicier result, though cooking time might vary slightly.
  • Cherry Tomatoes: These are the absolute star of the sauce! Their natural sweetness and vibrant acidity are distinct from larger tomatoes, creating a uniquely fresh and bright flavor profile for the marinara. Using ripe cherry tomatoes is crucial for the best taste.
  • Red Onion and Garlic: These aromatic powerhouses form the savory foundation of our sauce. Red onion offers a slightly sweeter, milder flavor than white or yellow onions when cooked, which beautifully complements the cherry tomatoes. Fresh garlic is non-negotiable for that authentic, robust Italian-inspired taste.
  • Olive Oil: A good quality extra virgin olive oil is essential, especially for Italian-inspired dishes. It provides a rich, fruity base for sautéing and infuses the entire dish with a wonderful depth of flavor.
  • Salt and Pepper: Simple yet indispensable. Use these to taste, ensuring the flavors of the chicken and sauce are perfectly balanced and seasoned. Don’t be afraid to adjust as you go.
  • Dried Basil and Dried Oregano: These classic Italian herbs are crucial for imparting that warm, fragrant, and slightly peppery Mediterranean essence to the tomato sauce. Using dried herbs allows their flavors to slowly meld and intensify during simmering.
  • Red Pepper Flakes: A touch of crushed red pepper flakes adds a gentle warmth and subtle kick to the sauce, enhancing its complexity without making it overly spicy. Adjust the amount to your preferred level of heat.

Step-by-Step Guide to Making Cherry Tomato Chicken

Creating this delicious dish is straightforward. Follow these detailed steps for a perfect result every time:

  1. **Prepare Aromatics:** In a large, heavy-bottomed skillet or Dutch oven, heat one tablespoon of olive oil over medium heat. Once shimmering, add the diced red onion and minced garlic. Sauté for 4-5 minutes, stirring occasionally, until the onions become translucent and softened, and the garlic is fragrant (be careful not to burn the garlic). This step is key to building the flavor base of your sauce.
  2. **Sear the Chicken:** Add the bite-sized chicken pieces to the pan. Season generously with ½ teaspoon of salt, ½ teaspoon of black pepper, and a dash of crushed red pepper flakes. Increase the heat slightly to medium-high and cook the chicken for 7-8 minutes, stirring occasionally, until it is nicely seared and browned on all sides. The chicken doesn’t need to be cooked through at this point, as it will finish cooking in the sauce. Once seared, remove the pan from the heat and set it aside.
  3. **Prepare the Tomato Sauce:** While the chicken rests, place the two pounds of cherry tomatoes into a food processor. Pulse a few times until the tomatoes are crushed to your desired consistency – some prefer a chunkier sauce, others smoother. You should end up with approximately 3.5 to 4 cups of crushed tomatoes.
  4. **Combine and Season:** Return the skillet with the chicken, onions, and garlic to the stovetop. Pour the crushed cherry tomatoes into the pan. Add the 1 ½ teaspoons of dried basil and ½ teaspoon of dried oregano. Stir everything together thoroughly, ensuring the chicken is well coated in the vibrant tomato mixture.
  5. **Simmer to Perfection:** Place the pan back over medium-high heat until the sauce begins to boil. Once boiling, reduce the heat to low-medium, cover the pan, and let everything simmer gently for at least 30 minutes. This simmering time allows the flavors to meld beautifully and the chicken to become incredibly tender. Taste the sauce towards the end of the cooking time and adjust salt and pepper as needed. For an even richer flavor, you can simmer for up to 45-60 minutes, adding a splash of water or chicken broth if the sauce becomes too thick.

Recipe FAQs and Expert Tips

Here are answers to common questions and additional tips to help you master this chicken in cherry tomato sauce:

Do you have to use cherry tomatoes in this recipe?

Yes, absolutely! Cherry tomatoes are the defining ingredient for this particular marinara. Their distinct sweetness, juiciness, and less acidic profile compared to larger varieties create a uniquely fresh and bright sauce that simply cannot be replicated with regular tomatoes. Trust me, it makes a significant difference in the final flavor profile.

Do you have to use red onion or will a white onion work?

Again, yes, it’s highly recommended to use red onion! Red onions, when cooked, offer a subtly sweeter and milder flavor than white or yellow onions. This sweetness complements the cherry tomatoes perfectly, contributing to the overall balance and deliciousness of the sauce. I’ve experimented with regular tomatoes and white onion in this recipe, and while it’s still edible, it simply doesn’t achieve the same depth and freshness that the specific combination of cherry tomatoes and red onion delivers. You’ll taste the difference!

Can you use fresh herbs instead of dried?

Absolutely! Fresh herbs can add another layer of vibrancy. If you’re using fresh basil and oregano, I would recommend using about 2 tablespoons of freshly chopped basil and 1 tablespoon of freshly chopped oregano. Add them during the last 10-15 minutes of simmering or stir them in right before serving to preserve their delicate fresh flavor and color.

How can I make this dish spicier?

If you love heat, feel free to increase the amount of crushed red pepper flakes to ½ teaspoon or even a full teaspoon. You can also add a pinch of cayenne pepper with the other seasonings for an extra kick.

Can I prepare this recipe ahead of time?

Yes, this dish is excellent for meal prepping! The flavors actually deepen and improve overnight. Prepare the recipe as directed, then allow it to cool completely before transferring to airtight containers. Store in the refrigerator for up to 3-4 days. Reheat gently on the stovetop or in the microwave.

Can I freeze chicken in cherry tomato sauce?

This recipe freezes beautifully! Once completely cooled, transfer the chicken and sauce to freezer-safe bags or containers, leaving a little headspace. It can be stored in the freezer for up to 3 months. Thaw overnight in the refrigerator before reheating.
