Essential Ingredients for S’mores Rice Krispie Treats

A flat lay photograph showcasing all the ingredients required for S'mores Rice Krispie Treats, including crispy rice cereal, graham crackers, butter, marshmallows, and chocolate chips.

Gathering your ingredients is the first step to creating these irresistible S’mores Rice Krispie Treats. Each component plays a crucial role in achieving that perfect balance of crispy, chewy, and chocolatey goodness. Here’s a closer look at what you’ll need:

  • Crispy Rice Cereal: The foundation of any great Rice Krispie Treat! You can use your favorite brand of crispy rice cereal. For those needing a gluten-free option, ensure you select a certified gluten-free variety. The crispness of the cereal is what gives these treats their satisfying crunch.
  • Graham Crackers: These are key to infusing that authentic s’mores flavor into our treats. You’ll need to finely crush them; a food processor makes this quick and easy. Any brand will do, but if you’re looking for a homemade or specialty option, consider trying Gluten-free Graham Crackers from This Vivacious Life for a unique twist. We’ll be using these both in the base and as a crunchy topping!
  • Butter: Pure butter provides a rich, creamy base for melting the marshmallows, contributing to the overall decadent flavor. If you’re aiming for a dairy-free recipe, simply substitute with a high-quality non-dairy or vegan butter alternative. The fat content helps create a smooth marshmallow mixture.
  • Marshmallows: The star of the show for that signature gooey, chewy texture! I personally recommend using Kraft marshmallows as they tend to melt exceptionally well, resulting in a perfectly smooth binder for your treats. For a more natural or healthier choice, Dandies marshmallows are an excellent alternative and are often vegan-friendly.
  • Chocolate Chips: What’s a s’more without chocolate? I prefer using semi-sweet chocolate chips for a balanced sweetness that complements the other ingredients. However, feel free to adjust to your personal taste by using milk chocolate for a sweeter treat or dark chocolate for a richer, more intense flavor. These will create a glorious melted layer on top.
  • Olive Oil (or Coconut Oil): A small amount of oil is added to the chocolate chips before melting. This simple trick helps to thin the melted chocolate slightly, making it smoother and easier to spread evenly over your treats, preventing it from seizing and giving it a beautiful sheen.
  • A Pinch of Salt (Optional but Recommended): While not listed in the original, a tiny pinch of salt (around 1/4 teaspoon) added to the melted butter and marshmallows can actually enhance all the sweet flavors, balancing them out and preventing the treats from being overly saccharine. It’s a common chef’s secret for sweet recipes!

Recommended Equipment

Having the right tools on hand will make the preparation process even smoother and more enjoyable:

  • Large Saucepan: Essential for melting butter and marshmallows. Choose one with enough capacity to comfortably mix in the cereal and graham crackers.
  • 9×13 Inch Baking Pan: The ideal size for creating a good batch of these treats. A metal pan generally works best for even cooling.
  • Parchment Paper or Nonstick Spray: To ensure your treats don’t stick and are easy to remove and cut.
  • Food Processor or Blender: Crucial for finely crushing the graham crackers. If you don’t have one, a Ziploc bag and a rolling pin will also work!
  • Rubber Spatula: Perfect for stirring the marshmallow mixture and, most importantly, for pressing the treats evenly into the pan without them sticking to your hands.
  • Microwave-Safe Bowl: For melting the chocolate chips quickly and efficiently.
  • Sharp Knife: For cleanly cutting your hardened treats into perfect squares.

Customization: Additions and Substitutions

One of the best things about these S’mores Rice Krispie Treats is how adaptable they are. Here are some fantastic ways to customize them to suit your preferences or dietary needs:

  • To Make This Recipe Dairy-Free: Simply use a non-dairy or vegan butter alternative in place of regular butter. Additionally, be sure to select dairy-free chocolate chips for the topping. Many brands now offer delicious dairy-free options that melt beautifully.
  • To Make This Recipe Gluten-Free: The primary ingredient to watch out for is the crispy rice cereal. Opt for a certified gluten-free rice crispy cereal. Also, confirm that your graham crackers are gluten-free (many brands offer this). With these two swaps, everyone can enjoy these treats!
  • Different Chocolate Varieties: While semi-sweet is a classic choice, feel free to experiment! Use milk chocolate for a sweeter, creamier topping, or dark chocolate for a more intense, slightly bitter contrast. White chocolate chips could also be a fun, visually appealing alternative.
  • Mini Marshmallow Topping: For an even more authentic s’mores experience, sprinkle a few mini marshmallows on top of the melted chocolate along with the graham cracker crumbs. For an extra touch, you can lightly toast them with a kitchen torch just before serving.
  • Nut Butter Swirl: For an added layer of flavor and richness, drizzle a thin layer of melted peanut butter or almond butter over the chocolate topping before the final sprinkle of graham crackers.
  • Sprinkles or Candies: Make them extra festive by adding colorful sprinkles on top of the melted chocolate, or even finely chopped candy bars for an indulgent twist.
  • Spices: A tiny pinch of cinnamon mixed with the graham cracker crumbs can add a warm, cozy note to the treats.

Step-by-Step Guide to Making S’mores Rice Krispie Treats

Follow these detailed steps to create perfectly gooey, crispy, and chocolatey S’mores Rice Krispie Treats. The process is straightforward and comes together quickly, so gather your ingredients and let’s get started!

Graham crackers being crushed into fine crumbs in a food processor, ready for the S'mores Rice Krispie Treats recipe.
Step 1

Step 1: Prepare the Graham Crackers. Start by finely grinding your graham crackers in a food processor. Pulse until they resemble fine crumbs. Measure out 1 1/4 cups of these crushed graham crackers. Set aside 1 cup for mixing into the cereal and 1/4 cup for the final topping. This dual application ensures graham flavor throughout the treat.

Butter melting gently in a large saucepan over low heat, forming a golden liquid base for the marshmallow mixture.
Step 2

Step 2: Melt the Butter. In a large, heavy-bottomed saucepan, melt the butter over low heat. It’s crucial to keep the heat low to prevent the butter from burning, which can affect the flavor of your treats. Allow it to melt completely until it’s a golden liquid.

Step 3

Step 3: Add the Marshmallows. Once the butter is fully melted, add all of the marshmallows to the saucepan. Gently stir them with a rubber spatula, ensuring they are coated in butter. This helps them melt evenly and prevents sticking.

The marshmallows have fully melted into the butter in the saucepan, creating a smooth, gooey mixture ready for the crispy cereal.
Step 4

Step 4: Melt the Marshmallows. Continue to stir the marshmallows into the butter over low heat until they are completely melted and form a smooth, gooey mixture. Remove the saucepan from the heat immediately once melted to prevent the marshmallows from becoming too hard or tough.

Crispy rice cereal and crushed graham crackers are being added to the warm, melted marshmallow mixture in a large saucepan.
Step 5

Step 5: Incorporate Cereal and Graham Crackers. Add the crispy rice cereal and 1 cup of the ground graham crackers to the pan with the melted marshmallows. Work quickly at this stage before the marshmallow mixture starts to set.

The crispy rice cereal and graham crackers are thoroughly mixed into the melted marshmallows in a pan, forming the base of the S'mores Rice Krispie Treats.
Step 6

Step 6: Mix Evenly. Using your rubber spatula, gently but thoroughly mix the cereal and ground graham crackers into the melted marshmallows. Continue to fold and stir until all the cereal and graham crumbs are evenly coated with the sticky marshmallow mixture. This ensures every bite has that desired texture and flavor.

The S'mores Rice Krispie Treat mixture is pressed firmly and evenly into a greased baking pan, creating a smooth layer.
Step 7

Step 7: Press into Pan. Pour the entire mixture into a pre-greased 9×13 inch pan. It’s easiest to pat the mixture down into an even layer using a rubber spatula that has been lightly sprayed with nonstick spray. Alternatively, lightly wet your hands with water and gently press down to avoid any sticking. Apply firm but not excessive pressure to prevent overly dense treats.

Step 8

Step 8: Melt the Chocolate. While the rice krispie base cools slightly, prepare your chocolate topping. Place the chocolate chips and 1 teaspoon of olive oil (or coconut oil) into a microwave-safe bowl. Microwave in short 30-second bursts, stirring well after each interval, until the chocolate is completely smooth and melted. This method helps prevent burning and ensures a glossy finish.

Melted chocolate is being spread smoothly over the top of the S'mores Rice Krispie Treat base in the pan.
Step 9

Step 9: Spread the Chocolate. Once the chocolate is perfectly melted, pour it over the cooled rice crispy base in the pan. Use an offset spatula or the back of a spoon to gently spread the melted chocolate evenly across the entire surface, creating a smooth, uniform layer.

Remaining crushed graham crackers are sprinkled generously over the melted chocolate topping on the S'mores Rice Krispie Treats.
Step 10

Step 10: Add Final Topping and Chill. Immediately sprinkle the remaining 1/4 cup of ground graham crackers over the still-wet melted chocolate. This ensures they adhere beautifully. To speed up the hardening process for the chocolate layer, place the entire pan into the refrigerator for about 10-15 minutes, or into the freezer for just a few minutes. You want the chocolate to be firm enough to cut without smudging.

The S'mores Rice Krispie Treats are neatly cut into uniform squares, ready for serving after the chocolate has set.
Step 11

Step 11: Cut and Serve. Once the chocolate layer has set and is firm to the touch, carefully cut the S’mores Rice Krispie Treats into desired squares or rectangles using a sharp, lightly greased knife. Serve immediately and enjoy the perfect balance of crispy, chewy, and chocolatey goodness!

Expert Tips for Perfect S’mores Rice Krispie Treats

Achieving the perfect batch of S’mores Rice Krispie Treats is simple with a few insider tricks. These tips will help you create a consistently delicious and aesthetically pleasing dessert every time:

  • Crushing Graham Crackers Without a Food Processor: No food processor? No problem! You can easily crush graham crackers by placing them in a sturdy plastic freezer bag, sealing it tightly, and then using a rolling pin, meat mallet, or even the bottom of a heavy pan to crush them until fine crumbs are formed. This can even be a fun, stress-relieving step!
  • Preventing Sticky Hands When Pressing: The marshmallow mixture is notoriously sticky. To create an even layer of rice krispies in your pan without the mess, lightly wet your hands with a bit of water before pressing down on the mixture. Alternatively, use a piece of parchment paper or a rubber spatula lightly coated with nonstick spray. This allows you to firmly press without any sticking.
  • Melting Chocolate Perfectly: When melting chocolate chips in the microwave, always add a small amount of neutral oil (like olive oil or coconut oil, as specified in the recipe). Microwave in short bursts, typically 30-second increments, stirring thoroughly after each. This prevents the chocolate from overheating, burning, or seizing, ensuring a beautifully smooth and glossy finish that spreads easily.
  • Quick-Setting the Chocolate Layer: After spreading the melted chocolate and sprinkling the graham cracker crumbs, placing the pan in the fridge for about 10-15 minutes, or the freezer for 5-7 minutes, will help the chocolate harden quickly. While you want it firm enough to cut cleanly, it’s perfectly fine if it’s not 100% rock-hard; a slightly softer chocolate layer can be quite pleasant.
  • Optimal Storage for Texture: Once your S’mores Rice Krispie Treats are completely set and cut, store them at room temperature in an airtight container. Avoid refrigerating them for extended periods, as this can cause the treats to become too hard and lose their signature gooey, chewy texture. They are best enjoyed at room temperature for maximum softness and flavor.
  • Don’t Overcook Marshmallows: Once the marshmallows are melted and smooth, remove them from the heat immediately. Overcooking can lead to stiff, hard treats instead of gooey ones. The residual heat from the pan will continue to cook them slightly, so pull them off the stove just as they become liquid.
  • Grease Your Pan Well: Even if you use parchment paper, a light spray of nonstick cooking spray in your pan before adding the mixture can be a lifesaver. This extra step guarantees easy removal of the entire slab of treats for clean cutting.
  • Use Fresh Marshmallows: Stale marshmallows won’t melt as smoothly and can result in a tougher texture. Always use fresh marshmallows for the best results.

Frequently Asked Questions About S’mores Rice Krispie Treats

Here are some common questions about making and storing these delightful S’mores Rice Krispie Treats:

How do you store these S’mores Rice Krispie Treats?

For the best texture and freshness, store your S’mores Rice Krispie Treats at room temperature. Place them in an airtight container or cover the pan tightly with plastic wrap. This helps keep them soft and chewy. Stored properly, they will last for 4-5 days.

Can you make these in advance?

Absolutely! These treats are perfect for making ahead. You can prepare them up to 2 days in advance of when you plan to serve them. Since they stay fresh for 4-5 days, making them a couple of days beforehand won’t compromise their quality, making them ideal for parties or events.

Do you put Rice Krispie Treats in the refrigerator after you make them?

Generally, no, you should avoid refrigerating Rice Krispie Treats for long periods. Refrigeration can make them too hard and chewy. The only time you should put these S’mores Rice Krispie Treats in the fridge is briefly (about 10-15 minutes) to quickly firm up the melted chocolate topping. As soon as the chocolate has hardened sufficiently for cutting, remove them and store them at room temperature.

Can I use different types of chocolate?

Yes, absolutely! While semi-sweet chocolate chips are recommended for a balanced flavor, feel free to use milk chocolate for a sweeter, milder taste, or dark chocolate for a richer, more intense experience. White chocolate can also be used for a different visual and flavor profile.

What if my marshmallows are old and hard?

Using fresh marshmallows is crucial for the best results. Old or stale marshmallows won’t melt as smoothly and can lead to a tougher, less gooey treat. If your marshmallows feel stiff, it’s best to get a fresh bag.

S'mores rice krispie treats cut into squares on parchment paper.
These S’mores Rice Krispie Treats are a fun twist on the classic rice krispie treat recipe. Ground graham crackers are added to rice krispie treats, melted chocolate is slathered on top and then more ground graham crackers are sprinkled on top.

Ingredients

  • 3 Tablespoons butter
  • 1 package JET-PUFFED Marshmallows, (10 ounces, about 40) (or 5 1/2 cups of miniature marshmallows)
  • 5 1/2 cups Rice Krispies cereal
  • 1 1/4 cups crushed graham crackers, divided
  • 2 cups chocolate chips
  • 1 teaspoon olive oil

Instructions

  1. Spray a 12 x 9 inch pan with nonstick spray. I like to use an olive oil spray, or line with parchment paper leaving an overhang for easy removal.
  2. Crush graham crackers in a food processor until you have 1 1/4 cups crushed graham crackers. Set aside 1 cup for the mixture and 1/4 cup for topping.
  3. In a large saucepan, melt the butter over low heat. Add the marshmallows and stir until completely melted and smooth. Remove from heat immediately.
  4. Add the rice krispies cereal and 1 cup of the crushed graham crackers to the melted marshmallow mixture in the pan and mix gently but thoroughly until everything is evenly coated.
  5. Pour the mixture into the prepared pan and pat into an even layer. It is easier to pat the mixture down using a rubber spatula lightly sprayed with nonstick spray OR by wetting your hands slightly and pressing down.
  6. Let the rice krispies treats cool to room temperature for 30 minutes to an hour. This allows the base to set before adding the chocolate topping.
  7. In a microwave-safe bowl, combine the chocolate chips with 1 teaspoon of oil. Microwave in 30-second increments, stirring well after each, until the chocolate is completely melted and smooth. Pour this melted chocolate onto the cooled rice krispie layer and spread evenly across the top. Then, sprinkle the remaining 1/4 cup of crumbled graham crackers over the melted chocolate.
  8. To harden the chocolate more quickly, place the pan into the fridge for 10-15 minutes or into the freezer for a few minutes. Once the chocolate has hardened (it doesn’t need to be rock-solid), remove the pan from the fridge or freezer. Allow the treats to come back to room temperature before cutting into squares for the best texture. Store the finished treats on the counter at room temperature in an airtight container.

Notes

  • To make this recipe dairy-free, use a non-dairy or vegan butter alternative. Also, make sure to use dairy-free chocolate chips.
  • To make this recipe gluten-free, use a certified gluten-free rice crispy cereal and ensure your graham crackers are also gluten-free.
