  • 1/2 cup non-hydrogenated plant based organic shortening, at room temperature (I used Nutiva organic shortening which is a mixture of coconut and red palm oil)
  • 1/2 tsp salt
  • 1 tsp coconut sugar
  • 1 egg
  • 2 Tbs water

Tart Filling Ingredients

  • 1/3 cup sugar-free jam, I like the St. Dalfour brand
  • 2 1/2 apples, sliced thin (1/8th of an inch max)
  • 1 Tbs coconut sugar
  • 1/4 tsp cinnamon
  • 2 Tbs water

Instructions

  • Preheat your oven to 375°F (190°C). Lightly grease a 9.5-inch round tart pan (a Le Creuset tart dish works wonderfully).
  • Add 3/4 cup almond flour, 1/2 cup tapioca flour, 3 Tbs coconut flour, 1/2 cup non-hydrogenated plant-based organic shortening, 1/2 tsp salt, and 1 tsp coconut sugar to a food processor. Mix until fully integrated and the mixture is thick and creamy.
  • Add 2 Tbs of water and 1 egg to the food processor and mix again until combined. Let the mixture sit for 5 minutes to allow the flours to absorb the liquid.
  • Take the tart crust mixture out of the food processor and form it into a ball with your hands. Place the ball into the center of the tart dish and gently push it into the pan until it has been evenly distributed across the bottom and up the sides. Dampening your hands slightly can help prevent sticking. Ensure there are no holes in the crust.
